PRAIRIE BREEZE, COWS MILK, USA
If there was ever one cheese that covers all the bases, Prairie Breeze would be it! A cheddar-like crumbly texture, with an aged gouda nuttiness and the fruity sharpness of an aged parmesan. Produced exclusively using milk from small family farms, it is aged a minimum of one year to bring out the optimum in texture and flavor. A six time award winner including best in class at the 2009 US Championship Cheese Contest and 2009 in the cheddar category at the American Cheese Society Awards.
TOMA PROVENCE, COWS MILK, USA
Produced in Marin County, CA on a fourth generation family dairy, this creamy semi-firm tomme is flecked with Herbs de Provence, which compliment the buttery rich flavors of this farmstead cheese. Awarded a Gold Medal in 2023 and 3rd Place American Original in 2019 by the American Cheese Society, and a Silver Award at the 2023 CA State Fair Cheese Competition.
TILLAMOOK EXTRA SHARP CHEDDAR, COWS MILK, USA
Born in the Oregon valley of the same name claimed by European settlers in 1851, Tillamook Creamery has been producing quality award winning cheeses and dairy products made from the milk of local dairies for over one hundred years. DRUNKEN GOAT, GOATS MILK, SPAIN
Produced in Spain’s mountainous Murcia region, Drunken Goat has delighted palates around the world with its creamy texture and distinctive flavor. Bathed in a local wine made from the Monastrell grape varietal, the wine soaked rind is not only edible, but manages to impart a subtle winey fruitiness throughout the entire cheese. Recognized as a winner among cheese aficionados, it also was awarded a Silver Medal at the 2022 World Cheese Awards.
GOUDA WITH BASIL AND GARLIC, COWS MILK, HOLLAND
Gouda cheeses (pronounced “HOW-da” in their homeland) are prized for their approachable flavor and smooth texture. The technique of “washing” or rinsing the newly formed cheese curds during the cheesemaking process results in the mild sweet flavor of the finished wheel. Flavored gouda cheeses are very popular amongst the locals, and The Basil Garlic version lends an Italian flair to this Dutch classic.
DOUBLE GLOUCESTER, COWS MILK, ENGLAND
The British Isles are renowned for their high-quality cheeses and dairy products that spring forth from the verdant grass rich pastures that make up much of their countryside. Based on the traditional English Cotswold cheese recipe, our smooth and buttery Double Gloucester ( “double” meaning that it is produced from whole rather than skimmed milk) is made using farm fresh milk and is flavored with dried chives and spring onions for a zesty touch.

A traditional English cheese whose roots trace back to the village of Derbyshire as early as the 17th century, Sage Derby is always a welcome addition to any cheese board. The addition of dried sage lends an earthy flavor note to this creamy and smooth cheese.
CARAMELIZED ONION AND BALSAMIC CHEDDAR, COWS MILK, ENGLAND

Originally called “Danish Tilsiter’ upon its introduction in the 1920's, Cream Havarti is prized for its buttery flavor and creamy semi-soft texture and is the perfect cheese for any get together.
The rigorous and exacting standard for Havarti production in Denmark has earned it a place as one of only twelve cheeses in the world recognized by the Codex Alimentarius; an industry guide of internationally recognized quality standards published by the Food and Agriculture Organization of the United Nations.
PAULUS ABBEY BEER CHEESE, COWS MILK, HOLLAND
This savory aged gouda is flavored with a local dark beer that is produced using a recipe from the 1500’s that was created at Holland's historic Paulus Abbey. The cheesemakers incorporate the fruity and robust beer into the firm and nutty aged cheese to produce a one of a kind Dutch original.
BELLAVITANO MERLOT, COWS MILK, USA
From the great cheese and dairy producing state of Wisconsin, Bellavitano Merlot can trace its production roots back to Italian cheese artisans over a century ago. Handcrafted by Certified Master Cheesemakers, the Bellavitano line of cheeses are cave aged to perfection in the pastoral Wisconsin countryside. The flavors are reminiscent of well-aged Italian cheeses such as Parmigiano Reggiano and Asiago. The finished cheese is then bathed in Merlot wine, and its aromatic purple rind is edible and delicious. Winner of countless awards over the years by the American Cheese Society and The World Cheese Awards.
MOLITERNO AL TARTUFO, SHEEPS MILK, SARDINIA
Named for the town of the same name where the company first marketed their high-quality Sardinian pecorinos, Moliterno cheeses are instantly recognized by the basket-weave pattern rinds, created by the molds that initially form the cheeses. The best Moliternos are then injected with black truffle paste, and further aged to integrate the luxurious truffle flavor with the rich texture and robust flavors of the cheese.
